Hey everyone, this is a standard chicken nugget and this is what a nugget made, from a whole chicken looks like. But today we’re going even further in making, a giant nugget from a whole ostrich. You can’t buy this at a regular, supermarket. So we went to an ostrich farm. This is a small family farm run by, a friend of ours. Here ostriches go from being the smallest chicks to the [music], largest bird in the world. They can reach up to 2.7 m in height and weigh, over 150 [music] kg. To help them grow so well, they’re, mainly fed compound feed. It gives the ostriches [music] all the necessary, vitamins and helps them gain weight quickly. The farm owner also [music], keeps the feeders constantly filled with hay. This aids the ostriches digestion. But what they love most is freshly [music] cut grass. I was also shocked to, learn that ostriches swallow stones. Since they don’t have teeth, small, stones grind up the food right in their stomach simply by rubbing against each.
other. The ostrich is a record-breaking bird [music] as it runs faster than any, other feathered creature. An ostrich’s running speed is comparable to a car,[music] 70 km/h. The ostrich also has the largest eyes of any land animal, a, full 5 cm [music] in diameter. That’s bigger than an elephant’s. Also, the, ostrich is the most dangerous bird on Earth and for defense [music] it uses, its legs with a huge claw on the end, which is why they wouldn’t let us into, the enclosure [music] with the ostriches. The most common myth about, ostriches is that they bury their heads in the sand. They don’t. In reality,[music] they just spend a very long time turning their eggs in the nest. By the, way, the ostrich egg is considered [music] the largest in the world and, equals 24 chicken eggs. We happened to catch the collection of [music] fresh, eggs at the farm.We bought several eggs because we’ll need [music] them for making the nugget. But still, the farm’s main goal is raising ostriches for [music] meat. So.
we returned home with a huge ostrich carcass. It weighs over 80 kg.It looks like the body of some prehistoric beast [music], And in essence, it is, because ostriches are direct descendants of dinosaurs.[music] I mean, just compare its size with an, ordinary chicken. It looks ridiculous [music] next to the ostrich. Ostrich, skin is so thick and durable that it’s used to make bags and shoes. All right, let’s [music] finally turn this ostrich into a giant nugget. So, we’re going to, start with butchering [music] the carcass. First, we’re going to cut off a, leg. >> [music], >> The color of [music] ostrich meat isn’t white like chicken or turkey, it’s red, like beef. I wonder what the nugget is going to taste [music] like.>> [music] >> The first leg is separated.>> [music] >> Now for the second leg.>> [music] >> All done. We’re also going to separate the wings. >> [music], >> This is the main meat on the ostrich. >> [music], >> Now we need to remove the skin as we don’t need it.
[music] >> We just need to carefully cut the, membranes connecting the meat and the skin with a knife.>> [music], >> All done. We’ve finally gotten rid of the skin. Just look at the amount of, muscle [music] in the ostrich legs. The next stage is deboning. We need to, separate the meat from the bones.>> All done. We can throw away the bones. Now we’re going to return to the ostrich torso [music], and cut off all the remaining meat from it.All that’s left is [music] the bare skeleton, which we no longer need. Finally, we have extracted all the meat from the ostrich. [music], Now to turn this into mince, we’re going to first need to cut these huge slabs of, meat into smaller pieces. Otherwise, they simply [music] won’t fit into the, meat grinder.>> [music] >> All right, the meat is cut. >> [music], >> Now we need the meat grinder. We’re going to turn it on, >> [music] >> and then begin the process of turning the ostrich meat into mince.>> [music] [music] >> All done.
Just [music] look at this huge mountain of minced meat. To be able to evenly, salt and season the mince, we’re going to need to spread it out on the table. All done. Now for the [music] spices. We’re going, to need black pepper, red pepper, and fried onion. We’re going to grind all of this in a mortar. And we’re all done. >> [music] >> We’re also adding dried garlic and paprika. One last [music] mix of the spices, and then we’re going to sprinkle them, evenly over the mince.>> [music] >> We’re also [music] going to add salt. And mix the mince thoroughly.>> [music] >> All done. Well, now this is quite a coarse mince, but in real nuggets, the texture is more like an emulsion. So, we’re going to use, a blade blender. We’re going to put ice into [music] it,and then the mince itself, and close the lid.>> [music] >> And then turn it on.The mince is going to get ground even finer, [music] and it’s going to mix, with the ice. 2 minutes later, we can turn off the blender.
The ostrich meat emulsion [music] is ready, and that’s exactly what we, need. So, we’re going to remove the blender container from the base,>> [music] >> and transfer the emulsion into a, gastronorm container. We need to do this with all of the remaining mince.>> [music] >> We managed to fill four gastronorm, containers. For the next step, we have a giant nugget-shaped mold with a lot of, holes that was specially custom-made. >> [music], >> Then we’re going to line the mold with parchment paper, and fill it with the meat emulsion. Now we need to [music] tamp it all down so that there are no voids and the, nugget turns out even. >> [music], >> All done. Now we can put it in the oven. But it turned out that a nugget of this size [music] simply doesn’t fit in a, regular oven. So we ordered a grill specifically for, our dimensions and we’re going to bake it in that. But first, the unboxing.>> [music] >> We’re going to assemble the grill into a working position.>> [music] >> And open the lid.
We’re going to use charcoal as the heat source. We’re going to open the box, and pour the charcoal [music] into the grill.>> [music] >> We’re going to pour lighter fluid all over it.>> [music] >> And then we’re going to light it.When the coals are lit, we need to spread [music] them evenly in the grill. And since we need an oven effect, we’re going to install heat deflectors.Otherwise, the nugget is going to burn from the bottom.>> [music] [music] >> We also need to install grates. And finally, we place the ostrich [music] nugget base to bake.>> [music] >> But all those holes in the mold aren’t, there for nothing. They’re needed so that excess juice can drain out during, the cooking, and the meat actually bakes rather than boils. So, we pierce the, parchment at absolutely every hole. We also stick a thermometer [music] into, the meat. And then, we close the grill. Now, all that’s left is to wait.3 hours later, we open the grill. We need to add a new batch of [music] coals.
And then, we continue baking. >> [music], [music] >> This took 7 hours for the internal, temperature of the meat to finally reach the required values. Finally, it was, ready.>> [music] >> We took the mold out of the grill, and returned to the kitchen. Using a huge tray, we remove the nugget base, from the mold. >> [music], >> Turned out pretty well, actually. But right now, it’s a giant patty in the, shape of a nugget. >> [music], >> Using a huge [music] tray, we’re going to remove the nugget base from the mold.It turned out pretty well, but right now it’s just a giant patty in the shape of, a nugget. We’re missing [music] the crispy breading on the outside, so we’re, going to make that. And for this, we need flour.A full 4 kg.And a whole box of [music] nachos. And we’ve got to open them. And immediately see a problem. The nachos are too [music] large to use for, breading. So, we’re going to have to use the blade blender again. We’re going to fill it with nachos.Put the lid on.And grind them up. >> [music].
All done. We’re going to return the corn crumbs [music] to the tray. Now this is the perfect breading [music] for the giant nugget. So, we’re going to continue turning nachos into crumbs.>> [music], >> All done. Now we’re going to need those [music] ostrich eggs from the farm. But, since this is the toughest egg in the world, to crack it, we’re going to need, to hit it with a knife in one spot and constantly rotate the egg. We have to, keep doing this until it [music] cracks.>> [music] [music] >> There it goes. After that, we’re going to pierce the membrane and open the egg.>> [music] >> And the second one is done the same way. We’re going to remove any large shell fragments and then beat the ostrich eggs. All done. Now we need to strain [music] the eggs to get rid of the smaller, fragments. All right, the liquid breading component is also ready. So we’re going to scoop, [music] up the flour and sprinkle it over the giant patty. The flour should stick to all the sides. >> [music].
[music] >> And now we’re going to take a portion of, egg and brush the giant nugget base. [music], All done. Now we’re going to flour it again. We’re going to [music] alternate layers a few more times.>> [music] >> Then as the final layer, we’re going to, use the cheesy nacho breading.>> [music] >> All done. The nugget is already looking, beautiful, but the bottom side still has no breading. So, we’re going to move the, base onto a raised platform. And cover it with a giant frying basket. >> [music], >> And then using zip ties, we’re going to securely fasten [music] the nugget. And then cut off all the excess. We don’t need the raised platform anymore. [music] So, we’re just going to, push it off the table. And in its place, we’re going to set a tray and then flip the basket over. The zip ties have already [music] served their purpose and are no longer needed. Now we can remove the small grid and continue breading the nugget on the, other side. Now the nugget is breaded on all sides. [music].
All that’s left is to deep fry it. Now for this purpose, a huge deep fryer was, custom made [music] for us.We also bought 25 bottles of oil. That’s 125 L, and now it’s time to open them. And fill our deep fryer with oil.Now to make this go faster, we’re going to do it together.>> [music], >> Now, we need to heat up the deep fryer. We’re going to install a huge burner, underneath and light it.2 hours later, [music] the oil was heated to the right temperature, and, finally, it’s time to lower our giant nugget into the deep [music] fryer.>> [music], >> The whole frying is only going to take 5 minutes, since the meat itself is, already cooked, we only need to fry the [music] thin layer of breading. Then, we’re going to lift the nugget out of the fryer.>> [music] >> Now, let’s check how crispy it is.That’s perfect. After it cools down, we’re going to transfer [music] it to a, tray. Our giant nugget made from a whole ostrich is finally on the table. This is.
a thousand times bigger [music] than a regular chicken nugget. It’s literally, the size of my torso. I think we managed to [music] replicate the nugget shape, 100%, and I’m really happy with the result. Let’s finally cut it open and, see what’s inside.A crispy crust on the outside, a uniform layer of mince on the inside, and even a, slight smoke ring from the grill. Let’s give it a try.>> [music] >> The taste of the ostrich nugget is not, at all like chicken. It’s more like something between duck and beef. The, tastiest part was the smoked side. I really enjoyed eating that. And that’s, all. Bye, everybody.
